Chewy Carrot Anzac Biscuits

They are 'Anzac-y', chewy and make snacking on biscuits that bit healthier. Give them a go this Anzac day (or any day) and let us know what you think.

Ingredients

  • 2 carrots, grated
  • 1 ½ cups rolled oats
  • ¼ cup almond meal
  • 1 tsp cinnamon
  • ¼ tsp baking soda
  • 3 tbs olive oil
  • 1 tsp vanilla paste
  • ¼ cup maple syrup
  • ¼ cup water

 

Instructions

 Be warned, these are chewy and delicious so you may have to double the recipe.

Step 1

Preheat the oven to 180 degrees.

Step 2

Combine all dry ingredients in food processor and whiz for 2 – 3 seconds until combined (mixture should still be chunky).

Step 3

Add wet ingredients including olive oil vanilla paste, maple syrup and water.

Step 4

Place a sheet of baking paper on a tray. Use a tablespoon to portion the mixture into six balls. Slightly press each ball down and sprinkle with a few extra oats.

Step 5

Bake for 30-40 minutes until golden brown.
